Floyd picked up a frozen turkey a while back. We started defrosting it in the fridge a couple of days ago. I cut it up into pieces before roasting it to make it easier to handle when cooked. Cutting the turkey is always a challenge, and my arms are very sore from work, so I’d rather get it done beforehand. Besides, it will take less time to cook. Various spices were added – parsley, sage, rosemary, thyme, oregano, chives, a bit of salt … I forget what else. Unfortunately for Floyd, it only had one drumstick. Unfortunately for me, it also had only one thigh.
I forgot to put this on the table. Oops.
I wanted to get some prep work done yesterday. I put some cucumber in vinegar as Floyd likes it. I don’t care for it, so some of them are left raw.
I cut up eggplant and various colours of peppers for a stir fry.
On the day, I made a couple of boxes of stuffing – one regular and one low sodium. It was done in a pan since the turkey was already cut up. Raisins, browned onions, and cranberries were put in, too.
The stir fry vegetables were good. I added some Kung Pao (Chinese stir fry) sauce for some flavour besides peppers.
Red potatoes were put in with the bird. There was one solitary white potato. It was roasted in Al’s, Floyd’s brother’s, roasting pan.
Time to serve. As always, it is self-serve.
Terry came by. We have him over for Thanksgiving and Christmas dinners, typically.
Nothing left but the dishes.
And pie with whipped cream. Terry brought the apple pie, and Floyd brought the pumpkin pie.
